MEALS/MENUS

Meal time is a highlight on a Rising Tide or Meca trip. The menu below was taken from a recent trip. All baking is done on board and the juices are fresh-squeezed. While every trips menu may not be exactly what’s listed here, this is representative of a standard weeks meal selections.

Day 1

  • Breakfast – Banana pancake, scrambled eggs, sausage, fresh fruit, orange juice
  • Lunch – Spicy chicken wings, ham sandwiches, fresh fruit, cookies
  • Dinner – Shrimp Creole, cole slaw, broccoli, fired ripe plantaine, key lime pie

Day 2

  • Breakfast – French toast, bacon, fresh fruit, scramble cheese/eggs, orange juice
  • Lunch – Spaghetti & meatballs, Italian salad, garlic bread, fresh fruit, cookies
  • Dinner – Baked Lobster w/ drawn bunner, potato puff, french salad, mixed peas, & onions, orange pudding

Day 3

  • Breakfast – Shrimp omelet, sausage, flour tortilla, fresh fruit, orange juice
  • Lunch – Tuna salad, fish patties, fried ripe plantaine, fresh fruit, cookies
  • Dinner – T-bone steak, green salad, brown potatoes, onions/peppers/steak juice, lemon pie

Day 4

  • Breakfast – Tomato/green pepper eggs, fry jacks, Italian sausage, fresh fruit, orange juice
  • Lunch – Pork chops, yellow rice, cucumber salad, fresh fruit, cookies
  • Dinner – Shrimp Casserole, stuffed bake potatoes, corn with basil, tossed salad, chocolate cream pie

Day 5

  • Breakfast – Scrambled eggs, johnny cake, sausage links, fresh fruit, orange juice
  • Lunch – Italian baked chicken, macaroni salad, fresh fruit, cookies
  • Dinner – Curry lobster, pineapple raisin rice, garden fresh salad, french style green beans, coconut pie

Day 6

  • Breakfast – Scrambled eggs, sliced ham, muffins, fresh fruit, orange juice
  • Lunch – Curry beef, white rice, cole slaw, fried ripe plantaine, fresh fruit
  • Dinner – Baked chicken, rice & beans, potato salad, cho-cho & carrots, fried ripe plantaine, chocolate pudding
